  • 4 medium sweet potatoes
  • 1/4 cup brown sugar
  • 2 tbsp unsalted butter
  • 1 tsp cinnamon
  • 1/2 cup chopped pecans
  • 1/2 cup dried cranberries
  • 2 cups fresh spinach

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and pierce the sweet potatoes with a fork; place them on the baking sheet. Roast for 45-60 minutes until tender.
  3. In a skillet, melt butter over medium heat; add spinach and cook until wilted. Stir in brown sugar, cinnamon, pecans, and cranberries until well combined.
  4. Slice roasted sweet potatoes open lengthwise and scoop out some flesh, mixing it into the stuffing.
  5. Fill each potato skin with the stuffing mixture and sprinkle more pecans on top. Bake for an additional 10 minutes.
  6. Serve warm, optionally drizzled with melted butter or maple syrup.
