  • 2 cups heavy cream
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream over medium heat until steaming. Stir in nutmeg and cinnamon.
  3. In a bowl, whisk egg yolks and granulated sugar until pale. Gradually add warm cream while whisking to avoid scrambling.
  4. Pour the mixture into ramekins placed in a baking dish. Add hot water halfway up the sides of ramekins.
  5. Bake for 30-35 minutes until set but still wobbly in the center. Chill in the refrigerator for at least two hours.
  6. Before serving, sprinkle brown sugar on top of each ramekin and use a kitchen torch to caramelize until golden.
