  • 2 cups Yukon Gold potatoes (cubed)
  • 6 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1 medium sweet onion (chopped)
  • 1 cup bell peppers (diced)
  • 1/2 cup whole milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking dish with nonstick spray.
  2. In a skillet over medium heat, brown the chorizo for 5-7 minutes until crispy. Add onions and bell peppers; sauté for another 5 minutes.
