  • 2 Chipotle Peppers in Adobo Sauce (chopped)
  • 1 cup Long Grain Rice (uncooked)
  • 1 can Black Beans (15 oz, rinsed)
  • 1 cup Bell Peppers (sliced; any color)
  • 1/2 cup Red Onion (sliced)
  • 1/4 cup Fresh Cilantro (chopped)
  • Juice of 2 Limes
  • 2 tbsp Olive Oil

Instructions

  1. In a bowl, mix lime juice, olive oil, minced garlic, and chopped chipotle peppers. Add chicken breasts and marinate for at least 30 minutes.
  2. While the chicken marinates, cook rice according to package instructions until fluffy.
  3. Heat olive oil in a skillet over medium heat. Add sliced bell peppers and red onion; sauté for about 5 minutes until tender yet crisp.
  4. Preheat grill or grill pan to medium-high heat. Cook marinated chicken for 6-8 minutes per side until internal temperature reaches 165°F. Let rest before slicing.
