  • 1 cup wild rice blend
  • 2 medium carrots, diced
  • 2 stalks celery, diced

  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Chop onions, carrots, and celery into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 3-5 minutes). Add carrots and celery; cook for an additional 3 minutes.
  3. Stir in minced garlic until fragrant (about 1 minute). Add chicken breasts and sear lightly before pouring in the broth.
  4. Bring to a boil; add rinsed wild rice blend. Reduce heat to simmer and cover for about 45 minutes until rice is tender.
  5. Remove chicken breasts, shred with forks, and return to the pot along with heavy cream. Stir well.
  6. Season with salt and pepper to taste before serving hot.
