  • 2 cups cream of mushroom soup (canned or homemade)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp poultry seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt and pepper and place them in the prepared baking dish.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant (about 3 minutes).
  4. Cook wild rice according to package instructions (usually about 45 minutes).
  5. In a large bowl, combine cooked wild rice, sautéed onions and garlic, shredded chicken, cream of mushroom soup, soy sauce, and poultry seasoning; mix well.
  6. Spread the mixture evenly in the baking dish. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
