  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cups fresh spinach
  • 1 cup cremini mushrooms (finely chopped)
  • 3 cloves garlic (minced)
  • 1 sheet puff pastry (thawed)
  • 2 tablespoons Dijon mustard
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then sear in a skillet until golden brown. Remove from heat.
  3. In the same skillet, sauté garlic and mushrooms until golden. Add spinach and cook until wilted, then let cool.
  4. Mix the cooled mushroom-spinach mixture with chicken and Dijon mustard in a bowl.
  5. Roll out puff pastry on a floured surface and cut into rectangles to fit around the filling.
  6. Place filling in pastry, fold edges to seal tightly, and transfer to a baking sheet.
  7. Bake for 25-30 minutes until golden brown. Serve warm with dipping sauce.
