  • 1 cup Greek yogurt
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons olive oil (extra virgin)
  • Salt and pepper to taste
  • 1 cucumber (grated and drained)
  • 2 tablespoons fresh dill (chopped)

Instructions

  1. In a bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Add chicken thighs and coat well. Cover and refrigerate for at least one hour or overnight.
  2. Preheat grill or grill pan over medium-high heat (400°F/200°C).
  3. Remove chicken from marinade; shake off excess. Grill for 6-7 minutes per side until cooked through (internal temperature should reach 165°F/75°C). Let rest before slicing.
  4. Prepare the sauce by mixing grated cucumber with remaining Greek yogurt, chopped dill, salt, and pepper in a bowl.
