  • 3 boneless, skinless chicken breasts (about 1.5 lbs), cut into bite-sized pieces
  • 12 oz smoked sausage (Andouille or your choice), sliced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 cans (14.5 oz each) fire-roasted diced tomatoes
  • 1 cup long-grain rice
  • 4 cups low-sodium chicken broth
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides, about five minutes. Remove chicken and set aside.
  2. In the same pot, add sliced sausage and sauté until golden brown.
  3. Stir in onion, bell peppers, and garlic; cook for about three minutes until softened.
  4. Mix in diced tomatoes (with juice), Cajun seasoning, and return the chicken to the pot; cook for an additional two minutes.
  5. Add rice and chicken broth; stir to combine. Bring to a boil, then reduce heat to low and cover. Simmer for 20-25 minutes until rice is tender.
  6. Let sit covered for five minutes before fluffing with a fork. Serve warm.
