  • 1 lb boneless, skinless chicken breasts (approximately 3 breasts)
  • 4 cloves fresh garlic, minced
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh thyme, chopped
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a food processor, pulse chicken breasts until finely minced.
  3. In a large bowl, combine minced chicken with garlic, breadcrumbs, eggs, herbs, salt, and pepper.
  4. Form the mixture into small patties about the size of golf balls.
  5. Place patties on the prepared baking dish and bake for 25 minutes or until golden brown, flipping halfway through cooking.
  6. While baking, whisk together soy sauce and honey in a small bowl; drizzle over rissoles before serving.
