  • 4 large flour tortillas

  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat skillet over medium-high heat; add olive oil.
  2. Season chicken breasts with salt, pepper, cumin, and paprika. Cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and let rest.
  3. Sauté diced bell peppers in the same skillet for about 5 minutes until softened but still crunchy.
  4. Shred the cooked chicken into bite-sized pieces.
  5. On half of each tortilla, layer shredded chicken, sautéed bell peppers, and cheese. Fold tortillas over.
  6. Return folded tortillas to the skillet; cook each side for about 3 minutes until crispy and golden brown.
