  • 3 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 8 ounces fresh mozzarella cheese, sliced
  • 1 cup marinara sauce
  • 4 slices sourdough bread
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper. Set up a breading station: place flour in one bowl, beaten eggs in another, and combine panko breadcrumbs with Parmesan in a third bowl.
  3. Dredge each chicken breast in flour, dip into egg, then coat thoroughly in the breadcrumb mixture.
