  • 3 boneless, skinless chicken breasts (450g), sliced
  • 2 cloves fresh garlic, minced
  • 8 oz (225g) wide rice noodles
  • 4 green onions, chopped
  • 1 cup roasted peanuts, crushed
  • 2 tbsp freshly squeezed lime juice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp tamarind paste
  • 1 tbsp sugar

Instructions

  1. Slice chicken breasts and mince garlic.
  2. Soak rice noodles in hot water for about 15 minutes until soft but not mushy; then drain well.
  3. In a large skillet or wok over medium-high heat, add oil and sauté the chicken until golden brown (about 5 minutes).
  4. Add minced garlic to the pan and sauté for another minute until fragrant.
  5. Mix in soaked noodles along with soy sauce, tamarind paste, and sugar; stir-fry until well combined.
  6. Serve topped with green onions, crushed peanuts, and freshly squeezed lime juice.
