  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup hummus (any flavor)
  • 2 cups fresh spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 4 large pita breads or tortillas

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat; cook chicken for 6-7 minutes per side until golden brown. Allow to rest before slicing.
  2. While the chicken rests, slice cherry tomatoes and cucumber; rinse spinach leaves.
  3. Spread a generous layer of hummus on each pita or tortilla wrap.
  4. Layer sliced chicken, spinach, cucumbers, and tomatoes on top of the hummus. Add any additional toppings if desired.
  5. Roll up the wraps tightly, tucking in the sides as you go to prevent spills.
  6. Cut in half and serve with extra hummus on the side.
