Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese (shredded)
  • 1 cup whole milk
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp mustard powder

Instructions

  1. 1. Cook the Pasta: In a large pot of salted boiling water, cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. 2. Prepare the Chicken: Season chicken breasts with salt and pepper. In a skillet, melt butter over medium heat and cook chicken for about 6-7 minutes per side until golden brown. Remove from heat, let rest, then slice.
  3. 3. Blanch the Broccoli: In the same pot of boiling water, blanch broccoli florets for 2 minutes until bright green and crisp. Drain well.
  4. 4. Make the Cheese Sauce: In a saucepan over medium heat, melt remaining butter. Stir in flour for about a minute until bubbly. Gradually whisk in milk until smooth; add garlic powder, mustard powder, salt, pepper, and shredded cheddar until melted.
  5. 5. Combine: In a large bowl, mix cooked macaroni, sliced chicken, blanched broccoli, and cheese sauce until evenly coated.
  6. 6. Bake: Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish and bake uncovered for about 20 minutes or until bubbly.
