  • 1 cup long-grain rice (uncooked)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • 2 cups beef broth (low-sodium)
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp dried basil

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a casserole dish with nonstick spray.
  2. In a large skillet over medium heat, brown the ground beef for about 8 minutes. Drain excess fat, then add chopped onion and minced garlic; cook until tender.
  3. Stir in uncooked rice, diced tomatoes, beef broth, oregano, basil, salt, and pepper. Simmer for about 5 minutes.
  4. Transfer the mixture to the greased casserole dish. Sprinkle half of the shredded cheese on top.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil, add remaining cheese, and bake uncovered for an additional 10 minutes until bubbly and golden.
