  • 2 cups shredded mozzarella cheese
  • 1 cup heavy cream
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 2 tsp Italian seasoning
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Cook the gnocchi in boiling salted water until they float (about 2-3 minutes). Drain well.
  3. In a saucepan over medium heat, combine heavy cream and Italian seasoning; stir until simmering. Add half of the mozzarella cheese until melted.
  4. In a large bowl, mix cooked gnocchi, spinach, and cheese sauce until fully coated.
