  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt; set aside.
  3. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Incorporate eggs one at a time followed by shredded carrots.
  4. Gradually add dry ingredients to wet mixture until just combined. If using walnuts, fold them in now.
  5. For the filling, blend cream cheese with powdered sugar until smooth.
  6. Scoop cookie dough onto prepared sheets; make an indentation in each scoop. Fill with cream cheese mixture and top with more cookie dough.
  7. Bake for 10-12 minutes or until golden brown around edges. Let cool on wire racks.
