  • 1 lb large shrimp, peeled and deveined
  • 1 lb baby potatoes, halved
  • 2 ears corn on the cob, cut into pieces
  • 8 oz Andouille sausage, sliced thick
  • 2 tbsp Cajun seasoning
  • 3 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a large bowl, combine halved baby potatoes and corn pieces. Drizzle with olive oil and sprinkle with half of the Cajun seasoning. Toss until coated.
  3. Add sausage slices to the bowl and mix well.
  4. Spread the mixture in the prepared baking dish; bake for 25 minutes until potatoes are tender.
