  • 1 lb boneless, skinless chicken breasts
  • 2 cloves fresh garlic
  • 1 cup panko breadcrumbs
  • 3/4 cup Buffalo sauce
  • 1 large egg
  • 2 tbsp unsalted butter (for the sauce)
  • 1/4 cup blue cheese crumbles (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the chicken breasts and garlic until finely chopped.
  3. In a large bowl, mix the chicken mixture with panko breadcrumbs, egg, and half of the Buffalo sauce.
  4. Form bite-sized meatballs and place them on the prepared baking sheet.
  5. Bake for 20-25 minutes until golden brown and fully cooked.
  6. Melt butter in a saucepan, stir in remaining Buffalo sauce, then toss baked meatballs in this mixture before serving.
