  • 1 cup crumbled feta cheese
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1/2 cup butter, melted (or substitute with 1/2 cup olive oil)
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Steam chopped broccoli for about 3-4 minutes until tender; set aside to cool.
  3. In a large bowl, mix melted butter and sugar until creamy. Add eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together flour and cocoa powder. Gradually fold this dry mixture into the wet ingredients along with feta and cooled broccoli.
  5. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool before cutting into squares.
