Broccoli Cheddar Twice Baked Potatoes are a comforting and indulgent dish that transforms simple ingredients into a gourmet experience.   • 4 medium Russet potatoes
  • 2 cups fresh broccoli florets (steamed)
  • 1 cup sharp cheddar cheese (shredded)
  • ½ cup sour cream
  • 2 tbsp unsalted butter
  • 3 green onions (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes, poke holes in them, and bake directly on the rack for 45-60 minutes until tender.
  3. While baking, steam broccoli florets for about 5 minutes until bright green and tender. Chop finely.
  4. Once the potatoes cool slightly, cut them in half lengthwise and scoop out most of the flesh into a bowl.
  5. Mix the potato flesh with butter, sour cream, half of the cheddar cheese, and chopped broccoli until creamy; season with salt and pepper.
  6. Spoon the mixture back into the potato skins, top with remaining cheese and green onions.
  7. Bake for an additional 15-20 minutes or until heated through and golden brown.
