  • 4 cups fresh broccoli florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Chop broccoli into bite-sized pieces. Dice onion and mince garlic.
  2. In a large pot over medium heat, melt butter. Add onion and sauté until translucent (about 5 minutes). Stir in garlic until fragrant.

  4. Use an immersion blender to purée the soup until smooth (or blend half for texture).
  5. Return pot to low heat; stir in heavy cream and cheddar cheese until melted.
  6. Season with salt and pepper before serving hot, garnished with extra cheese if desired.
