  • 1 medium green cabbage (about 2 lbs), sliced
  • 1 large yellow onion, diced
  • 2 medium carrots, thinly sliced
  • 4 slices bacon or smoked sausage, chopped
  • 2 cups low-sodium chicken broth
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Chop the cabbage into quarters, remove the core, and slice into thin ribbons. Dice the onion and slice the carrots.
  2. In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving the fat in the pot.
  3. Sauté the diced onion in the bacon fat until translucent, then add the sliced carrots and cook for about five minutes.
  4. Stir in the shredded cabbage along with salt and pepper; cook until wilted (about five minutes). Crumble in the reserved bacon.
  5. Pour in the chicken broth and apple cider vinegar; stir to combine.
  6. Cover and simmer on low heat for 30-40 minutes until tender.
