  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream (room temperature)
  • 2 tsp gelatin powder
  • 1 tsp vanilla extract

  1. Preheat oven to 350°F (175°C) and grease a springform pan.
  2. In a saucepan, combine half of the blueberries with 1 tbsp sugar; cook until softened, about 5-7 minutes. Blend until smooth and let cool.
  3. In a mixing bowl, whip heavy cream until soft peaks form. In another bowl, combine sour cream, remaining sugar, vanilla extract, and cooled blueberry puree. Gently fold in whipped cream.
  4. Bloom gelatin in 2 tbsp cold water for 5 minutes, then dissolve in the microwave. Stir into the blueberry mixture until combined.
  5. Pour into prepared crust and refrigerate for at least 4 hours until set.
