  • 1 cup cherry tomatoes, halved
  • 4 slices bacon, cooked until crispy
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 cups romaine lettuce, chopped
  • 1 medium avocado, sliced
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy or bake at 400°F (200°C) for 15-20 minutes. Once cooked, crumble it.
  2. While the bacon cooks, wash and chop the romaine lettuce into bite-sized pieces.
  3. Slice the cherry tomatoes in half.
  4. In a serving bowl, layer the ingredients starting with a generous scoop of cottage cheese, followed by chopped lettuce, halved cherry tomatoes, and crumbled bacon.
