  • 1 lb lean ground beef
  • 8 flour tortillas
  • 2 cups red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 medium onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup low-sodium chicken broth
  • 2 tsp chili powder

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef for about 7-10 minutes. Drain any excess fat.
  3. Add diced onion and cook until softened (3-4 minutes). Stir in chili powder.
  4. Spoon about two tablespoons of the beef mixture into each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Pour red enchilada sauce over the rolled tortillas and top with shredded cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil during the last 5 minutes to allow the cheese to bubble.
