  • 8 oz cremini or button mushrooms, sliced

  • 3 carrots, sliced

  • 1 cup red wine
  • Salt and pepper to taste
  • Optional: thyme or bay leaves

Instructions

  1. In a large pot over medium-high heat, sear seasoned beef cubes in oil until browned on all sides (about 3-4 minutes per side). Remove from pot.
  2. In the same pot, sauté onions, carrots, and garlic for about 5 minutes until soft.
  3. Add sliced mushrooms and cook for another 5 minutes until they release their juices.
  4. Pour in beef broth and red wine; scrape up any browned bits from the bottom. Bring to a simmer.
  5. Return the beef to the pot along with accumulated juices. Add thyme or bay leaves if desired. Simmer gently for about an hour until beef is fork-tender.
  6. Taste and adjust seasoning as needed. For a thicker stew, mix cornstarch with water and whisk into the pot before serving.
