Beef and Cheese Chimichangas are a deliciously crispy treat filled with seasoned ground beef and melted cheese, offering a perfect blend of flavors that will satisfy any craving.

  • 1 lb lean ground beef
  • 4 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 medium onion, diced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray or oil for baking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, brown the ground beef with diced onions until cooked through. Drain excess fat.
  3. Stir in cumin, chili powder, garlic powder, salt, and pepper; mix well and remove from heat.
  4. Lay tortillas flat and fill each with beef mixture and a generous amount of cheese. Fold in sides and roll tightly.
  5. Place chimichangas seam side down on a baking sheet lined with parchment paper. Lightly spray with cooking spray.
  6. Bake for 25-30 minutes or until golden brown and crispy.
