1 lb lean ground beef
4 large flour tortillas
2 cups shredded cheddar and Monterey Jack cheese
1 medium onion, diced
2 tsp cumin
2 tsp chili powder
1 tsp garlic powder
Salt and pepper to taste
Cooking spray or oil for baking
Instructions
Preheat your oven to 400°F (200°C).
In a skillet over medium heat, brown the ground beef with diced onions until cooked through. Drain excess fat.
Stir in cumin, chili powder, garlic powder, salt, and pepper; mix well and remove from heat.
Lay tortillas flat and fill each with beef mixture and a generous amount of cheese. Fold in sides and roll tightly.
Place chimichangas seam side down on a baking sheet lined with parchment paper. Lightly spray with cooking spray.
Bake for 25-30 minutes or until golden brown and crispy.
