  • 4 large bell peppers (mixed colors)
  • 1 lb ground beef or lamb
  • 1 cup cooked long-grain white rice or basmati
  • 1 medium onion, finely chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cinnamon
  • Salt and pepper to taste
  • 1 cup high-quality tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Slice the tops off the bell peppers and remove seeds; set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add ground meat and cook until browned.
  4. Stir in cooked rice, cumin, paprika, cinnamon, salt, and pepper. Mix well.
  5. Stuff each pepper generously with the filling.
  6. Pour tomato sauce over the stuffed peppers.
  7. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until peppers are tender.
