  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 4 cups apples (peeled and chopped; Granny Smith or Honeycrisp recommended)
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. In another bowl, whisk the flour, baking powder, cinnamon, and salt. Gradually mix this into the creamed butter mixture.
  4. Toss the chopped apples with lemon juice in a separate bowl to prevent browning.
  5. Spread half of the shortbread mixture into the prepared pan, layer with apple chunks, then crumble the remaining mixture on top.
  6. Bake for 35–40 minutes until golden brown. Let cool completely before slicing into squares.
