  • 2 medium Granny Smith or Honeycrisp apples, peeled and chopped
  • 1 tsp ground cinnamon, divided
  • 2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix chopped apples with half of the cinnamon and half of the maple syrup; let it sit for a few minutes.
  3. In another bowl, combine rolled oats, remaining cinnamon, baking powder, and salt.
  4. Whisk together milk, eggs, and the rest of the maple syrup in a separate bowl until blended.
  5. Pour the wet ingredients over the dry mixture and fold in the apple mixture evenly.
  6. Transfer everything to the prepared baking dish and bake for 30-35 minutes until golden brown on top.
