  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 45 tbsp ice water
  • 3 medium fresh apples (Granny Smith or Honeycrisp), thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough holds together. Shape into a disk and refrigerate for 30 minutes.
  2. While chilling, toss sliced apples with sugar, cinnamon, and half the cheddar cheese in a bowl.
  3. Roll out the dough on a floured surface into a rough circle about 12 inches wide.
  4. Place the rolled dough on parchment-lined baking sheet. Pile apple filling in the center, leaving about two inches around edges free; fold edges over filling.
  5. Sprinkle remaining cheddar on top of apples.
  6. Preheat oven to 400°F (200°C) and bake for 35-40 minutes until golden brown and bubbly.
